Flotation is the opposite process of decantation. By dispersing air or inert gas into the juice, finely divided particles bind superficially to the suspended solids, making them lighter and causing them to rise to the surface.
The juice before flotation is enzymatized and treated with clarifiers to promote aggregations of colloidal solids. The flotation process is of particular interest combined with must and juice clarification processes, where the separation process by decantation is discontinuous and requires long dwell times, while that by flotation takes place quickly and continuously.
